Effectiveness of kaolin silver complex for control of acetic bacteria and brettanomyces

Kaolin-Silver complex (KAgC) is a fine grey powder where silver metallic form is strongly linked on an inert carrier as kaolin. The complex is 99% kaolin and 1 ± 0.1% silver metallic form. The main objective of this new oenological practice is making wines with low concentration of sulfites or without sulfites.
